Santiago High School Students Dive into STEM at Coastline College

Nearly one hundred students from Santiago High School in Garden Grove spent an exciting day at Coastline College’s Newport Campus exploring the world of science, technology, engineering, and math through the MESA STEM Day. The event provided students with a hands-on, immersive experience, allowing them to see how classroom learning translates into real-world applications.

The all-day event was filled with interactive activities designed to spark curiosity and inspire career aspirations. Students discussed the differences between cow and human eyes, dissected cow eyeballs to explore anatomy, studied ecology and groundwater wells, and learned about emerging technologies such as artificial intelligence and biofilms. These activities gave students a glimpse into how STEM innovations are shaping industries, improving lives, and addressing some of the most pressing challenges of today.

A highlight of the day focused on environmental issues in California’s Central Valley, where the ground is sinking due to excessive groundwater extraction. Students learned about the science behind water management and the ongoing challenges of keeping pollutants out of the state’s water supply, connecting classroom lessons to real-world sustainability concerns.

Many students shared their future ambitions, revealing aspirations to become surgeons, mechanical engineers, environmental scientists, and computer programmers. One student remarked, “This was fun. Thank you, Coastline. This makes me want to study engineering!” Another added, “Dissecting the eyeball was so cool—I want to be a neurosurgeon.”

“It’s incredibly powerful to watch students connect with STEM in ways that build their confidence and sense of belonging,” said Sara Estrada, MESA Program Director. “You can see the moment they realize — this isn’t out of reach; this is for me. That’s what MESA is all about — creating access, fostering community, and helping students see that their stories, perspectives, and strengths are essential in solving the challenges of tomorrow.”

The excitement was contagious as students explored STEM hands-on, with Coastline faculty, staff, and MESA mentors guiding experiments, answering questions, and sharing personal experiences navigating STEM careers and higher education. To top it off, students were treated to lunch on the massive deck of the campus overlooking the ocean, catered by The Stand, where they could choose between hamburgers and veggie burgers, giving them a chance to relax, connect with peers, and discuss what they had learned so far. For many, this was their first visit to a college campus, helping them envision themselves as future college students and innovators.

Through experiences like this, Coastline’s MESA (Mathematics, Engineering, Science Achievement) program continues to create inclusive opportunities for students historically underrepresented in STEM fields. By providing access, mentorship, and hands-on learning, MESA helps close equity gaps and empowers students to pursue higher education and meaningful careers in science, technology, engineering, and mathematics.
